If you are in the market for a new high-end espresso machine, it’s worth having a look at the Rocket Cellini Evoluzione V2 Espresso Machine. This machine has so many neat features, that we'll cut to the chase and get right into it!

The V2 has a copper insulated boiler with brass ends. It looks great, and it supports a plumb-in line as well as a water tank. There’s a handy switch to select the water supply you want, and the basin comes right out for easy filling and cleaning. This is a particularly nice feature if you plan to renovate your kitchen in the future, since you can easily adapt the V2 to take a plumb-in water supply when the time is right. 

In the box, you receive an English/Italian language user manual with nice photography and handy tips for maintaining and cleaning your new espresso machine. You also get double and single spouts with interchangeability with the single and double size baskets. Additional accessories include a brush, tamper, and scoop that all tie in well with the design and feel of the overall unit. Rocket’s fine Italian design is showcased right down to the finest details. You’ll also get an instructional video and micro-cloth for easy cleaning. 

The outside of the espresso machine features two gauges to give you all of the information about what’s going on inside your V2. The left-hand gauge shows boiler pressure, which should rest between 1 and 1.5 Bar. It’s important to avoid pressurizing the boiler, since most of the heavy lifting is done on the brewing side of the machine. You’ll see this pressure reading on the right-hand gauge. Depending on your grind and your coffee preparation, you should aim for 9 to 10 bar to produce a good cup of coffee.  

Another great feature of this unit is the pressure regulator that helps you manage the flow from a plumb-in line. Users can also set up a drain line to their plumbing under the countertop, either to a slop bucket (gross word, I know…) or right into your sewage return line. The user manual is packed full of information for you to help set up your espresso machine to perform at its best. 

The Rocket Cellini Evoluzione V2 Espresso Machine comes loaded with lots of refined features even compared to other competition in the price class. The high-quality insulated copper boiler offers reduced thermal instability and increased energy efficiency. Even in a cool kitchen, your reservoir will stay at the perfect temperature using a fraction of the energy compared to older models. With a boiler capacity of over 60 ounces (1.8L) and a reservoir capacity of 98 ounces, the V2 will keep the caffeine flowing all day. If you can’t quite make the height of 16.25” with the cup rack attached, you can remove it to make the unit exactly 15” tall. The stainless steel body of the machine offers a long life and easy-clean surface. It’s a durable material that will last a long time through daily wear and tear.

Another great feature of the V2 is the nozzles. How many times have you seen someone burn themselves on a steam wand? With these internal-insulated wands, the V2 won’t cause accidental burns during or after use. Espresso machine buyers often overlook the importance of safety, but it’s something you should consider carefully when purchasing something that holds boiling water in your kitchen or café. One of the other thoughtful safety features of the V2 is the low water sensor. As soon as the water level drops below a critical amount, the micro-controller will cut power to avoid overheating and increasing the steam pressure by accident.  

Depending on how you plan on using your espresso machine, there are a couple of small drawbacks that might turn off some buyers. The warm up time averages at about 15 minutes. This machine is also not pod-friendly if you are someone who is in a hurry in the morning. If you are looking for a programmable unit with auto-on or auto-off functionality, you’ll have to turn to another model to find those features.
